Cajun Shrimp Pasta

This is one of my classic dishes that I like to serve to my favorite clients. Its a very light dish that is bold in flavor. I believe that you will find the dish most appealing as you enhance it to fit your specific flavor profile. Once you begin to understand what flavors marry well and taste good together then the combinations that you can put together are endless. That all comes with time and practice however. Ingredients

8 each 21-25 Shrimp (completely peeled)

3 oz Asparagus, bias cut

8 oz Penne Pasta or Rice

4 cloves Roasted Garlic

1 Tbls Shallots (fine dice)

3 oz Unsalted Butter

3 oz White Wine

3 oz Goat Cheese

2 oz Roma Tomatoes ( large Dice)

1/4 tsp red pepper flakes

1 TBL diced tomato

1 TBL fresh basil, chopped

Preparation

1. Sauté asparagus, garlic, shallots & shrimp. Deglaze with white wine
and reduce by two thirds.
2. Add butter and stir until a sauce forms.
3. Add pasta, basil and tomatoes. Check seasoning. Add S&P if needed.
4. Place in bowl and sprinkle cold goat cheese and diced tomato over the top
5. Sprinkle with chopped parsley as needed
