Cranberry Vinaigrette by Chef Sean Andre


I like to use this simple recipe in my favorite salad right now. I make a yummy Strawberry Salmon Feta Salad. I think this dressing accents the salad perfectly. If you are anything like me, you need to watch your weight during these winter months. Its hard to keep the pounds off when its so cold. This light salad will relieve you of some of that pressure. It will also make your taste buds smile.

 The dressing:

  • 1 cup cranberry juice 
  • 1 cup cranberries chopped fresh 
  • 1 tablespoon extra virgin olive oil 
  • 1 tablespoon red wine vinegar
  • 1 tablespoon honey
  • 2 teaspoons minced chives
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Preparation

  1. Place juice and cranberries in a small saucepan; bring to a boil. Cook until reduced to 1/4 cup (about 5 minutes). Combine cranberry mixture, oil, and remaining ingredients in a small bowl; stir well with a whisk.
