White Chocolate Glazed Doughnut Bread Pudding

Today I am giving a bit of insight into one of my favorite recipes. This is my original recipe that has become quite famous over the last few years. It actually happened by accident as I was making creme brulle for another client. I had a small amount of doughnuts left over from a different party that was sitting on the counter as I was preparing the creme brulle. I thought to myself, as most adventurous chef do, what would happen if I combined these two recipes. It was kinda cool and totally awesome how this came together.

In summary, the recipe starts with scratch-made glazed doughnuts that are soaked in a white chocolate crème brûlée batter before placing the dessert in the oven. This process gives it a light burnt sugar crunch on top that gives way to an irresistible sweet custard center. Then I glaze the whole thing with caramel. I serve it with sliced strawberries, powdered sugar and more caramel. I like to top with vanilla bean ice cream to just throw it over the top.
